Weekend Crunchy Vanilla Almond Granola


It's the weekend!! Yippee!

I love my leisurely Saturday and Sunday mornings, with my drawn out, casual breakfasts.
What better way to start the day than with a fresh, seasonal, chopped fruit salad (I like mine sprinkled with lime juice, ground cinnamon, & homemade vanilla bean extract), strong coffee, and homemade granola? This version is packed with antioxidants and protein, with the addition of hemp and chia seeds, as well as crunchy nuts, dried coconut and oats.

Super quick and easy to make, it's delicious on its own by the handful, in a bowl with milk, or sprinkled on top of yogurt &/or fruit. It smells SO good while it's baking, too. When I last made this, we had overnight house guests who were literally salivating waiting for it to come out of the oven!

Crunchy Vanilla Almond Granola
Makes about 8 cups

3 cups raw rolled oats
1 cup dried, unsweetened flaked coconut
1/2 cup raw sliced almonds
1/3 cup grapeseed oil
1/2 ground cinnamon
1/4 tsp ground cloves
1/4 tsp freshly ground nutmeg
1/4 cup chia seeds
1/4 cup hulled hemp seeds
1/2 cup raw sunflower seeds
Pinch of salt
1/2 cup agave nectar
1 TBS vanilla extract
1 cup chopped almonds
1 cup raisins

Combine all ingredients except raisins and chopped almonds in large bowl and mix well. Spread this mixture onto a lightly greased shallow cookie sheet.
Bake at 350 degrees for 20 minutes, stirring well after 10 minutes to ensure it evenly cooks and dries.
Remove from oven and stir in chopped almonds and raisins.
Cool completely. Can be stored in an airtight container in the refrigerator or freezer for weeks... if it lasts that long.

  2. This looks great! I make something similar, but I don't add all the seeds. I may have to try yours sometime. When I make my Maple Vanilla Almond Granola, I used crushed vanilla beans. They are like heaven in a jar! They also make your house smell amazing! :)

    1. I 100% agree with you -- There is NOTHING that smells as good as a slightly crushed vanilla bean!
      I have a few of mine stuffed into sugar jars, and seeping in little bottles of vodka to make homemade vanilla extract! YUMMY! Thanks so much for your comment :)
